A Lavender Simple Syrup Recipe to Welcome Spring!

Lavender Simple Syrup

This is an extremely simple way to add a hint of lavender into your favourite treats. Think lavender latte, lavender lemonade, dribbled over ice cream, swirled into yogurt, added to your fave hot or chilled tea… the possibilities are many.

You will need:

A lidded jar, kettle, mesh strainer, wooden spoon, small stovetop pot, and a sterilized glass jar or bottle for finished product.

Ingredients:

3-4 tbsp Culinary Lavender Buds (I happen to have some available in the online shop!)

1 cup Water

1 cup Sugar (white granulated or cane work best but you can try an alternative if you have dietary restrictions, results may vary)

 

Step 1: Infuse the water with Lavender!

Put the water on to boil. Agitate the buds by rubbing them in your hands or crushing roughly with a mortar and pestle. Place the lavender buds into a jar (you’ll need a lid) and pour the boiling water over them. Let cool.

Once cooled, place the lid on the jar and set aside (preferably in a dark place) overnight.

Step 2: Syrup time!

Pour the infusion through your mesh strainer into your small pot on the stovetop, turn it on medium to low heat. Slowly add your sugar, stirring frequently until dissolved. Once you have a clear substance, remove from heat and let cool. When cooled, pour it into your sterilized jar/bottle.

This will keep in the fridge for roughly 6 weeks. You can experiment with the lavender and sugar balance, depending on your taste!
